This is hands down one of my favorite warm weather dishes. Whether you serve it on the side or just enjoy it as a snack, it’s so fresh and delicious!
Here’s what you’ll need:
1/2 large jicama (scroll down to find use for the second half of your jicama!)
2 mango
3-4 small cucumbers, with peel
Juice of 1.5 limes
Tsp cayenne pepper
Salt, to taste
Peel and chop the jicama and mangos into small cubes. Chop the cucumbers to the same size, leaving the peel on. Combine in large bowl and set aside. In a separate bowl, mix the lime juice, cayenne pepper and salt. Pour over fruit mixture and you’re ready to go! It’s that easy.
Now, you’ve got 1/2 of your jicama left over. Make sure it doesn’t go to waste and turn it into another fun snack. Slice the jicama into 1/4-1/2 inch strips. Dump into a gallon size plastic bag and add the juice of one lime and 1/2 teaspoon of cayenne pepper and salt to taste. Seal the bag and shake thoroughly to completely coat each jicama slice. This is a delicious, healthy snack to keep in the fridge for days.
